Grilled Halibut Fillets on Garlic Green Beans

This grilled halibut recipe is easy, healthy, and delicious! The grilled fish sits on a pile of garlicky green beans for a great combination of flavor and texture. You can do this halibut recipe with either fillets, or halibut steaks. 

Makes 4 Grilled Halibut Fillets on Garlic Green Beans
Prep Time: 15 minutes

Cook Time: 8 minutes

Total Time: 23 minutes

Ingredients:
> 1 pound green beans, trimmed
> 2 tbsp olive oil
> 1 tbsp butter
> 4 cloves garlic, minced
> 4 fresh halibut fillets or steaks (about 6-ounces each)
salt and fresh ground black pepper to taste
> 2 lemons, halved
> 1/4 cup chopped hazelnuts (optional)

Preparation:

1.) Bring a pot of salted water to a rapid boil. Add the beans and cook for about 5 minutes, or until crisp-tender. Remove the beans to ice water, to stop the cooking, and reserve. When the beans are cold, drain well. 

2.) In a large sauté pan, add 1 tbsp olive and butter, and heat on medium, until the butter melts and foams. Add the drained beans and the garlic. Saute for about 3 minutes, tossing continually, until the beans are warmed. Do not brown the garlic Turn off heat, season with salt and fresh ground black pepper to taste, and reserve. 

3.) Preheat grill on med-high. Brush the halibut with the remaining olive oil, and season with salt and fresh ground black pepper to taste. When the grill is hot, cook the halibut for about 3 to 4 minutes per side, or until cooked. 

4.) Divide the warm garlic green beans on four plates, and top with the grilled halibut. Finish by squeezing a fresh lemon half over each plate, and garnish with the hazelnuts.
